This takes as much time as pouring a bowl of cereal. I first discovered this gem of a combination after giving a presentation many months ago. I made some fresh granola to show how easy and economical it can be. There was cottage cheese there also, so I decided to put them together as an example of a great after school snack. I was hooked.
Granola is extremely easy to make and you may never buy it again. There are so many recipes out there, you are sure to find one that you love. The granola pictured is a recipe that I created for the Holiday issue of Real Food and Health Magazine. I love to add blueberries and maybe an extra splash of maple syrup if I’m feeling crazy. If you or your kids like cottage cheese, this is definitely something to try. Cottage cheese is source of protein and granola made with rolled oats is a source of whole grains. If you add a 1/2 cup of blueberries, you are getting a serving of fruit in them as well.
- 1 cup reduced fat cottage cheese
- 1 cup granola
- ½ cup blueberries (optional)
- Drizzle maple syrup (optional)
- Spoon cottage cheese in a bowl
- Top with granola
- Add blueberries and maple syrup if desired
