Am I a little late to the mashed cauliflower party or am I bringing it back? A couple of years ago, it was everywhere and I never see it anymore. I think it needs to come back.
While I see absolutely nothing wrong with mashed potatoes, this is a nice change. I’m a fan of both. If you include the garnish on this, which I totally would, it’s only 5 ingredients.
I love cauliflower, I always have. As a RD, we always tell everyone to eat their colors. That means ALL colors, even white. Just because a vegetable is white does not mean it is void of nutrients. On the contrary.
1 cup of cauliflower has 85% of the daily value of vitamin C. That’s pretty amazing, considering for that massive amount of vitamin C, you are only eating roughly 30 calories. That’s pretty insignificant on the caloric scale. It also has potassium and vitamin B6. You should probably go out and buy some cauliflower soon.
I need a little saltiness to my mashed cauliflower, but I never just want salt, I want cheese. This is always why I say I could never be a vegan, I love cheese.
You could try to pass this off as something other than mashed cauliflower, but why bother. It’s cauliflower and it’s delicious.
- ½ large head of cauliflower, about 4cups
- ¼ cup freshly grated parmesan cheese
- ¼ cup low fat sour cream
- ½ teaspoon salt
- 2 Tablespoons chopped chives for garnish
- In a steamer, steam cauliflower until soft - about 15 minutes
- Pay dry with a cloth or paper towel
- Place in food processor with remaining ingredients and pulse until smooth
- Top with chives
