If you haven’t made energy bites yet, you’re missing out. What are they? Concentrated healthy calories that are designed to give you…energy. They are versatile and they are delicious. I started making these a while back when I needed a no-bake quick fix for not having any granola bars in the house.
I can’t keep them around. My husband, especially, will eat more than the allotted serving size. This fact alone indicates that these little suckers are in high demand in our house.
What’s so great about them? First, you can sub out ingredients and get a similar result. First, the rice cereal. Don’t have rice cereal? Crush up some cereal that you have in the house. This is really for crunch and texture and because I really like rice cereal.
The peanut butter sub is obvious. Allergic to peanuts? Sub out for almond or cashew butter. Easy. I’d keep the honey because it’s sweet, but you could use maple syrup. And then you need something that is a little dry for a binder – cocoa is my obvious go-to, but I have also used almond flour. A little goes a long way.
Mixing flavors is fun. Add citrus zest and shredded coconut for a different twist. What I’m saying is, make them your own. Empower yourself in the kitchen.
- ½ cup Old Fashioned Oats
- ¼ cup rice cereal
- ¼ cup peanut butter (smooth or chunky)
- 1 Tablespoon honey
- 1 Tablespoon unsweetened cocoa
- Combine all ingredients
- Portion out into 9-10 balls and roll with clean hands
- Store in refrigerator
- Serving size is 3 energy bites
