Basil Pesto and Spinach Gnocchi

  • 2 cups fresh basil - leaves and stems
  • ⅓ cup olive oil
  • ¼ cup parmesan cheese
  • ½ teaspoon salt
  • pinch of black pepper
  • 1 Tablespoon olive oil or canola oil
  • ¼ cup diced yellow onion
  • 4 cups fresh spinach
  • 4-5 cups gnocchi
  • 1 cup diced fresh mozzarella (optional)
To make the pesto
  1. In a food processor or high powered blender, combine basil, olive oil, parmesan cheese, salt, and pepper
  2. Process until smooth and creamy, set aside
  1. Bring a large pot of salted water to a boil.
  2. Boil gnocchi until soft and they rise to the top of the pot
  1. In a large skillet over medium heat, add olive or canola oil
  2. Add diced onion and sauté for 5 minutes, stirring occasionally
  3. Add spinach and allow to wilt down, stirring occasionally
  4. Add a pinch of salt and pepper if you desire
  5. Mix pesto, gnocchi, and spinach together in a large bowl
  6. Garnish with parmesan if desired
