I am one of those Dietitians who really love salad. This is not a new thing, I genuinely love a good salad. Some of my earliest memories of going out to eat (and the occasions were rare, coming from a family of 9) at Ponderosa and being in awe of the salad bar. Some people have the same emotions when they see a gorgeous steak sizzling in front of them. I feel the same way for veggies.
For those of you who aren’t a fan of the vegetable, this may sound a little strange to you. Most people judge what I eat, whether they want to or not. If you can imagine, sitting in the hospital dining area with a table of your fellow dietitians and knowing that everyone is looking to see what the RDs have for lunch today. We really can’t win. If we have a salad, when we are sighed at, because, of course, the RDs should have a salad. If perhaps we are in the mood for pizza, or heaven forbid, a dessert, then we are shamed for not representing what a healthy diet should look like.
One of my pitfalls with salad is that I adore a rich creamy dressing. Yep, I have a bottle of the good stuff in my fridge right now, just in case I get the craving for it. While I try to keep it healthy all the time, sometimes healthy doesn’t win. This time it does.
I loved green goddess dressing when I was little. I can’t remember who made the bottled stuff, maybe Wish Bone? Who knows, it was delicious and I bet if I read a label or two in my youth, I would have seen a long list of hard to pronounce ingredients.
This dressing isn’t a true green goddess dressing, but it sure tastes delicious and it is creamy! It couldn’t be easier. Pour all of the ingredients in the blender and blend away until creamy.
Make it the next time you have a craving for a creamy dressing – it works as a dip too!
- 1 medium ripe Hass avocado, remove skin
- 1 cup plain, non-fat yogurt
- 1 teaspoon lime juice
- 1/2 teaspoon salt
- 1 small clove garlic, about 1/2 teaspoon minced
- 1-2 Tablespoons fresh basil leaves
- 1/4 cup extra virgin olive oil
- Place all ingredients in a high powered blender and blend until smooth and creamy.
