We eat fruit every night at dinner. I’m not stretching the truth at all, EVERY night. I can be sure, if I didn’t get enough fruit in during the day, I will have some at dinner. I can also be sure that if my kids eat nothing else, they are getting fruit.
Dinnertime fruit comes in various forms. Sometimes we make smoothies, we eat it with greek yogurt, and sometimes we make a pretty salad. Most of the time, I dress our fruit with a citrus juice – lime, lemon, or orange. It brightens everything up.
Needless to say, I’m at the store almost everyday getting more fruit. We eat it morning, noon, and night. I guess I should be happy, but my goodness, it’s a good thing I don’t have a day job.
What I love about this combo is the sweetness of the strawberries, the tart and tangy pineapple, and the creamy avocado and mango. I added a little zing with some lime juice over the top. The lime serves two purposes, it makes all the flavors pop and it also keeps the avocado from turning brown.
This recipe serves two. I wrote it that way specifically, so that you can multiply it as you see fit. And you read that right, each serving is 2 cups of fruit – we could all use more fruit in our diets.
- 1 cup strawberries, stems removed and cut in quarters
- 1 cup mango, peeled and diced
- 1 avocado, diced
- 1 cup diced pineapple
- 1 Tablespoon fresh lime juice
- Prepare all of the fruits, remove stems and peels and dice into bite sized pieces
- Squeeze fresh lime juice over the fruit and gently toss
- Divide into two bowls
