Did you know that National Hummus Day is May 13th? Use this as an opportunity to celebrate all things hummus. Because you NEED to make these. Everyone at your next party is going to rave on your culinary skills. You get to tell them that not only are your tasty bites delicious, they are also healthy!
Hummus and Panko Crusted Chicken Bites are made with Sabra Hummus. Sabra sent me hummus samples and since I made these three times, I definitely used some hummus. I made them 3 times because they are just that good. I tried different types of hummus each time and boy, they just got better every time.
Start out by cutting the chicken into bite sized pieces. I chose to cut them into 1×1 cubes. Season with salt and pepper before adding hummus
Spread each piece of chicken with hummus, choose your favorite flavor. I used classic and roasted red pepper when I made these. I can just imagine how delicious they would taste with pine nut though. To see all of Sabra’s flavors, visit their site: Sabra
Next, to save time, use seasoned panko breadcrumbs and add about 2 teaspoons to the top of each and slightly press down to stick to the hummus.
15-20 minutes later – perfection!
I have to smile each time I think about the foods my children eat and how much that differs from my childhood. Hummus is a staple in their diet and I first had hummus in my early 20’s. I was a little apprehensive at first, like a kid trying a new food and not really sure what to expect. Now, I can’t quite imagine my diet without it. It fits perfectly in my diet, which is mainly plant based.
There is no denying that a plant based diet is the most healthful of all diets. The best for weight loss, the best to prevent cancer, the best to prevent heart disease. For those who want to take advantage of a plant based diet and also eat meat, they choose the Mediterranean diet. This type of diet pattern includes a wide variety of fruits and vegetables, in addition to lean proteins, such as chicken and fish.
Hummus is made from chickpeas, which are a source of plant based protein and fiber. Also in hummus is extra virgin olive oil, garlic, herbs and spices. All heart healthy and all good.
These hummus and panko crusted chicken bites are sure to be a family favorite and a crowd pleaser. I know they are in my house!
- 2 pounds boneless, skinless, chicken breasts, cut into bite sized pieces
- non-stick cooking spray
- 1 - 10oz container of Sabra hummus, your favorite flavor
- ½ teaspoon fine salt
- ¼ teaspoon black pepper
- 1.5-2 cups panko breadcrumbs
- Cilantro for garnish
- Preheat oven to 375°F
- Cut chicken into bite sized pieces and arrange on a baking sheet sprayed with non-stick cooking spray
- Season with salt and pepper
- Spread 1-2 teaspoons hummus on top of each piece of chicken
- Place 1-2 teaspoons of panko breadcrumbs on top of hummus, slightly pressing breadcrumbs to the hummus
- Bake for 15-20 minutes or until a meat thermometer reads 165°F when placed into the middle of a piece of chicken
- Garnish with cilantro and serve immediately
If using chicken breasts, increase the time to 35-40 minutes, depending on thickness.
Always use a meat thermometer to check temperature is 165°F or above to ensure it is cooked thoroughly
