My favorite recipes are sometimes the simplest. I really like desserts and I really love baking desserts. Number one problem: Sometimes, time is not on my side to make dessert. This vanilla cheesecake fruit dip is something I make when we haven’t had dessert in a while and I need it quick. It’s also a great way to serve fruit at dinner.
It’s 3 ingredients, 5 if you count a honey drizzle and cinnamon on top. Low Fat cream cheese, vanilla greek yogurt, and vanilla extract. I add the vanilla extract for an extra pop of flavor. When we lived in Europe, I would add a vanilla bean to this. Since we moved back to the States, I now see that vanilla beans are $12 each and that is just plain crazy. I’m not sure who is buying vanilla beans for $12, but I don’t know any of them. So, since I consider you all my friends, I will probably not be writing any recipes that call for a $12 flavor addition, regardless of how good it tastes. Even if you have the money, why would you spend it on a really expensive bean?
If you think about what is in a cheesecake, it’s cream cheese, eggs, sugar, and most of the time sour cream. It’s the cream cheese that makes a cheesecake, so I can’t take that out. I don’t want to add too much added sugar and I want vanilla flavor, so yogurt is the perfect companion to the cream cheese. Depending on the brand of yogurt you purchase, it may be a little too tart, that’s where the drizzle of honey comes in. And, I really just like cinnamon on just about anything. Totally optional though.
Whip this up tonight and pair it with your favorite fruits for a dessert that everyone will love!
- 3 oz low fat cream cheese
- 1, 6-8 ounce container of vanilla greek yogurt
- 1 teaspoon vanilla extract
- Optional: Honey Drizzle and Sprinkle of Cinnamon
- In a mini food processor or with a strong arm and whisk, mix together cream cheese, yogurt, and vanilla extract
- Pour into serving bowl and top with optional ingredients
