I can’t keep these in stock. Energy bites are the hottest food around. Not only are they tasty little nuggets of joy, they are also really easy to make. They are an “empty the pantry” kind of food.
I use a few staples in mine:
Nut butter: Definitely needed to hold everything together. Peanut butter and almond butter work wonderfully in energy bites.
Oats: They give energy bites bulk and fiber. Adding to the “energy” portion, they are a whole grain carbohydrate.
Honey: A little goes a long way.
Nuts: all nuts work well in energy bites. Chopped peanuts, almonds, pistachios, pecans, and walnuts are all delicious.
Chocolate chips(optional): They contribute energy and rich flavor to most energy bites, although not necessary.
Dates: Not in this recipe, but pureed dates are a great binder
Crunchy Rice Cereal: Not in this recipe, but these add bulk with crunch
These can be kept at room temperature, but I really like to keep mine in the fridge and pop one in when I need a boost of calories. And they come together in minutes, so perfect for meal prep time.
- 1 cup rolled oats
- 1/2 cup almond slivers
- 1/3 cup dark chocolate chips
- 1/2 cup smooth peanut butter
- 1 Tablespoons ground flaxseed
- 1 Tablespoon honey
- In a food processor, add oats, almonds and chocolate chips
- Pulse until almonds and chocolate chips are chopped, not ground
- In a medium bowl, add contents of food processor and remaining ingredients
- Form into 1″ balls
- Store in refrigerator
