The health benefits of citrus will have you running to the store to pick some up tonight.
Vitamin C: If you haven’t noticed, we are in a bit of a flu epidemic right now. While vitamin C isn’t going to cure you of any flu symptoms, having enough in your body at all times is important to keep you healthy. Vitamin C is an essential nutrient, which means you can’t make it in your body, we have to obtain it from food. It is a powerful antioxidant and that helps protect your cells from damage. Believe it or not, most Americans do not get the recommended amount of vitamin C in a day. If you smoke, your vitamin C needs are higher. Time to eat this salad.
Hydration: Unless you are really good at carrying your water bottle around everywhere throughout the day, you are probably walking around mildly dehydrated at all times. Dehydration can cause headaches, irritability, and even lightheadedness. Everything you eat and drink contributes to your hydration level. Obviously, the more foods you eat high in water content will help add to your fluid needs. This salad is a great addition to your meals to help keep you hydrated. Time for some citrus.
Fiber: Let’s talk fiber. If you are not drinking enough water throughout the day, chances are, you are also not getting enough fiber. Most people don’t. Citrus fruits contain a type of fiber called soluble fiber. This stuff is awesome. It binds to cholesterol, it can help regulate blood sugar levels, and it is a prebiotic – the food for the good bacteria in the gut. I mean, come on, you need some citrus in your life right now. Time to make this salad.
I used oranges and grapefruits, but blood oranges, tangerines, tangelos and any other citrus would be amazing here. You get the same benefits from all citrus. I love the addition of the lime juice squeezed over the top and some lime zest for even more flavor.
This is a must make!
- 2 Pink Grapefruits
- 2 Oranges
- 1 Lime
- To segment your citrus: Cut away the peel as close to the edge as you can get and then cut your citrus into segments – removing as much of the white pith as you want
- Using a microplane, small grater, or zester, zest your lime
- Cut your lime into wedges
- Arrange grapefruit and orange segments on a plate, garnish with zest and squeeze lime over the top
