Summer! It’s almost here. I can feel it. Mango, avocado, and blueberries are the perfect combination to get you ready for summer. When I have the natural sugars in fruit, there is no need to add extra.
I’m focusing a lot on skin lately. I have been looking into it for a while. I was recently contacted by a freelance writer for Redbook Magazine for my thoughts on beta-carotene, a carotenoid, and skin health. This was an amazing opportunity. It not only got me looking into the research, but really made me start thinking more about how my own nutrition is affecting my skin.
Here is what I found regarding carotenoids: Ultraviolet radiation (UV) from the sun breaks down collagen in your skin, and causes inflammation, wrinkles and erythema, reddening of the skin from the sun. All of these byproducts of UV exposure can make us look older. Some studies have shown that beta-carotene, a strong dietary carotenoid, may provide some natural defense against the UV damage from the sun. Dietary carotenoids, such as those found in carrots, are not meant to be a substitute for sunscreen, but they may help prevent your skin from damage, improve skin health and appearance and give us all a natural youthful glow(1).
Mangoes contain beta-carotene, but cantaloupes, carrots, papayas and pumpkin do as well.
So, let’s talk about other nutrients in this salad that are excellent for skin health. Blueberries and their antioxidants, the nutrients that give them the bright blue/purple colors, are the key behind their skin beauty benefits. Antioxidants help protect cells against damage that can make skin look old. You can also find these powerful antioxidants in raspberries, strawberries, and red grapes.
Finally, the illustrious avocado. The avocado is good for pretty much everything. When we talk about eating food that will improve the look of our skin and nourishing from the inside, this is it. Avocados are high in monounsaturated fats, which are excellent for the skin.
Juice a little lime on the top and you have vitamin C to add to your antioxidant load for the day.
This is the perfect time to improve your skin from the inside and feel good inside and out.
- 1 large mango
- 1 small Haas avocado
- 1/2 cup blueberries
- 4 lime slices
- Cut mango and avocado into small chunks
- Arrange in two bowls and spread blueberries on top
- Squeeze lime juice over the top
