My beautiful blog has been neglected lately. I am so lucky that I have many different commitments, sometimes the non-paid work of my blog is put on the back burner by the paid work. Luckily, I would do it all for free. That’s when I know I love what I do.
I’m still cooking, everyday. Some of my newest recipes will not be featured on my blog, but on other websites. When they are published, I will definitely let you know. I am continuing to branch out with flavors and ingredients and I love where it is taking me.
I get a lot of cues from current projects. The more I read about ingredients and nutrients, the more I am inspired to cook with those foods. One of my favorites right now is salmon. I did so much research on the benefits of omega-3 fatty acids a few months back, I have been making salmon much more lately and I actually like it.
You see, I am not a fish eater, it’s not my favorite and I don’t think I’m an expert at cooking it. I’m getting better and my salmon recipes are much loved in our house. This lemon dill salmon is one of our favorites.
It’s a classic combination – lemon + dill + salmon = perfect flavor.
I have dill growing in my garden this year and I am taking every opportunity to use it. I marinate this salmon for about 30 minutes, but not much longer.
I like the thick center cuts of salmon, but the thinner cuts are also great, especially for faster cooking time. Both work well.
I hope you try this – serve it with a light green salad and roasted potatoes, yum!
- 4 – 4-6 ounce cuts of salmon
- Juice and zest of 1 lemon
- 2 tablespoons chopped fresh dill
- 1 tablespoon extra virgin olive oil
- 1 teaspoon salt
- non stick cooking spray
- Add juice, lemon zest, dill, olive oil, salt to a shallow tray and mix together
- Place salmon, flesh side down into the marinade and turn to coat – allowing flesh side down to stay in the marinade
- Marinate for 30 minutes
- Heat a grill or grill pan to medium high heat
- Spray grill pan or grill with non-stick cooking spray (stand back if spraying on an open flame) – or brush grill grates with oil
- Place salmon flesh side down on the grill and grill for 6 minutes on each side
- Salmon is done when the bright pink color is gone and it easily flakes off.
- Serve warm
