I have quite the treat for you all today. I always say that we don’t have enough dietitians writing cookbooks. There are so many great cookbooks out there, but if you want to eat healthy, finding one from a nutrition expert is a no-brainer. One of my favorite RDs, Toby Amidor, just released another cookbook – this girl is on fire. Check out all of her cookbooks here!
Her cookbooks are for everyone. They are no fuss, healthy, and easy. This latest cookbook is all about meal prep. We all meal prep in some way, some people are way better at it than I am. This is a book for everyone, beginners and even those who just need a few more ideas on what to pack. The meal in the center of the cover image is my kind of lunch!
I have a special treat for you. Toby has shared two of her recipes from this very cookbook with me and I get to share them with you.
The first is Baked Almond Cherry Bars and they are delicious. I made them the day Toby sent me the recipe and it’s a total winner. I keep them in the fridge and my husband and I have been snacking on them for days. I LOVE this one.
For my swim parent friends – this is a great make-ahead bar for swim meet days. It’s the perfect energy bar without all the extra nonsense we don’t need to be giving our little athletes.
This next one is for my busy friends who are desperately in search of new ideas. It’s the Lighter Waldorf Salad with Pears
This recipe makes two servings, so if you don’t have anyone else to cook for, prepare this and have your meal prep done for two days of lunches. It’s as easy as that. The old classics CAN come back to life.
