This is me, trying to hold on to every last minute of summer. I will miss it terribly. I have been preparing myself for about a week now. The weather forecast has indicated that it’s going to turn cold tomorrow and not just cold, but a crazy 30° drop in temperature cold. I will never be quite ready, but I’m happy I got the heads up. I’m thinking about all those poor souls who don’t watch the news. Tomorrow will be quite the surprise.
Because I’m trying to hold on to summer, this is an appropriate day for this salad. It looks like summer right? Tomorrow, I’ll make something apple spice or with butternut squash, but today, I will love my strawberries – knowing that I won’t have them again until spring. Thank you Costco for always brining in a steady supply of ripe berries – I love you.
Figs are definitely not something you’ll find everyday, so if you find them, buy them. They are simply the best. I probably love them so much because of their rareness in my life. I love all things I can’t have all the time. I told my husband I want a fig tree. I hope he’s keeping a list of all of the things I want in our forever home, I fully expect to have them. Fig tree – check.
All good things right here. Strawberries and figs with earthy walnuts and salty feta cheese. I love the drizzle of honey on top and I actually eat that mint – it’s so refreshing. This will wake up your taste buds for sure. If you can make this, do it, otherwise, sit back, save this recipe and wait for spring. It will be here before you know it.
- 1 pound ripe strawberries, cut into slices
- 4 ripe figs – any variety, cut into slices
- 1/2 cup walnuts
- 1/4 cup crumbled feta cheese
- 1 tablespoon honey
- mint for garnish
- Slice all fruit and arrange on a platter
- Sprinkle with walnuts and feta
- Drizzle honey immediately before serving
- Serve cold and garnish with mint
