  • 1 yellow summer squash
  • 1 small cucumber
  • 2-3 Tablespoons cream cheese, or any spread
  • 1 cup lettuce leaves
  • 1 Tablespoon extra virgin olive oil
  • salt and pepper
  1. Heat a small skillet over medium heat or prepare the outdoor grill
  2. Slice the squash to ¼" thickness and slice the cucumbers thin
  3. In a skillet, add a teaspoon of olive oil and add the squash slices
  4. Heat until the start to brown and remove *only brown one side to keep their shape
  5. Repeat until the squash is browned
  6. Make sandwiches (tip: spread the cream cheese on the cucumber and place on the squash and then add the lettuce and another squash to top)
  7. Sprinkle with salt and pepper
