Easy Refrigerator Pickles

Serves: 3 pint size jars
  • 5-6 medium cucumbers
  • 1 cup white vinegar
  • 1 cup water
  • 2.5 Tablespoons kosher salt, divided
  • 3 large sprigs of dill
  • 3 garlic cloves
  1. Cut cucumbers to desired shape - spears or rounds
  2. Place in a colander with a bowl underneath
  3. Sprinkle with 1.5 Tablespoons kosher salt and place in refrigerator for 2-3 hours
  4. Remove from refrigerator and rinse salt off pickles
  5. In a medium bowl, mix vinegar, water and 1 Tablespoon kosher salt and stir until salt dissolves (this takes about 1 minute)
  6. In each of 3 pint sized mason jars, add 1 big sprig of dill and 1 clove of garlic
  7. Pack the cucumbers in the jars and pour the vinegar liquid over the cucumbers in each jar, just covering the cucumbers
  8. Screw lid on and place in refrigerator
  9. Allow to rest for 2 days before eating
