Grilled Peaches with Feta and Mint

Serves: 8 peach halves
  • 4 ripe peaches
  • 1 teaspoon canola oil (optional)
  • 2 Tablespoons crumbled feta cheese
  • 2 Tablespoons chopped fresh mint
  • 2 teaspoons balsamic vinegar glaze
  1. Heat an outdoor grill or grill pan over medium heat
  2. Cut peaches in half and remove pit
  3. If grill or grill pan is not seasoned, carefully brush a small amount of canola oil over the grates - if using an outdoor grill, be careful for flare ups)
  4. Place peaches on the grill, cut side down
  5. Allow peaches to grill for 5 minutes
  6. While peaches are grilling, chop mint and crumble feta
  7. Remove peaches from the grill and sprinkle with feta, mint, and drizzle with balsamic glaze
  8. Serve warm
