Who says lunch has to be boring, the same, and take a million years to make? Not in my house. I pulled this together in 10 minutes, so that means this works as a quick lunch or a quick dinner. There is a shortcut or prep that has to happen, but it’s one you are probably already doing anyway.
The only shortcut you need to take with this dish is to use cooked chicken. If you meal prep and cook a lot of chicken at once and keep it in the fridge, then you are set. If you are not a meal-prepper, the rotisserie chicken is your best friend. I like that the chicken can be either hot or cold in this salad and both ways yield an equally delicious gyro bowl.
The only other part of this dish that has to be made is the tzatziki – which is just cucumber, greek yogurt, lemon, salt, and a drizzle of olive oil.
Let’s talk nutrition. I was asked recently how I fit my veggies in throughout the day. I find that most people try to backload their veggies and get them all at dinner. I eat a salad almost everyday and to be honest, it’s usually a mix of whatever leftovers we had from the night before. Sometimes, I’ll have leftover roasted potatoes, or sweet potatoes, chopped up tomatoes, cucumbers, and I’ll toast some leftover bread. Either a quick vinaigrette or a yogurt ranch are my two go-to dressings.
This gyro bowl helps you knock out a ton of your nutritional needs. The greens and tomatoes are at least two servings of veggies with vitamin C and depending on which type of green you choose, vitamin K and iron. Each bowl has 1 cup of shredded chicken, so that protein is going to keep you fueled for hours. Lastly, that tzatziki – goodness, I love this stuff. I struggle to get enough calcium everyday, so when I get it at lunch, I feel like I’m winning.
