I’m going to keep this short and sweet, just like this meal. On weekends, I do not cook big meals. I realize this is probably the opposite of most people, when weekends are their time to cook. I cook a good meal each night for dinner on weeknights, so weekends are my time off. Even though I don’t like to cook a big spread over the weekends, I still like to cook – but I just do it on a smaller scale.
This is my favorite way to cook pasta – simple. I like to go buy different types of pasta and see how we can use them. This piccolini was new for us and my kids LOVE it. It doesn’t taste any different from any other pasta, but it’s new and they love new. It has grooves, which made me think it would easily catch a thick sauce.
I had a big bag of spinach that I needed to use and my go-to for using spinach is to sauté and blend – sort of like a pesto, but not so thin. I do love a good spinach pesto though. This one doesn’t use any parmesan cheese in the blend, but all of the other pesto ingredients are there..with less oil as well.
This would be awesome to switch up, maybe with more veggies, like cucumbers and onions. And if you love meat and can’t live without it in a meal, then you can add some grilled chicken, shrimp, or flank steak. These flavors can stand alone or with meat.
