Spinach and Tomato Piccolini with Feta

  1. Cook pasta according to package directions
  2. In a medium skillet, heat over medium heat and add 2 tablespoons extra virgin olive oil
  3. After oil heats for about 30 seconds, add garlic and spinach and stir until spinach starts to wilt
  4. Remove spinach from heat when it is wilted and transfer to a food processor
  5. With the spinach in the food processor, add the remaining olive oil, pine nuts, salt, and lemon juice
  6. Blend until smooth
  7. Drain pasta, transfer it to a serving bowl, and add blended spinach to pasta and stir
  8. On top of pasta, add halved cherry tomatoes, and feta
  9. Drizzle with extra virgin olive oil if desired
