For those of you that know me, I am not a big seafood lover. Never have been. I remember the days when I was little and I couldn’t stay in the kitchen because my dad was cooking shrimp. And please don’t get me started on the perils of fish stick day at school. Ekk. That smell. However, as I’ve gotten older, more than anything, I appreciate the nutrition benefits of seafood and while I still don’t eat all seafood, I have found ways to really enjoy it and this Everything Roasted Potato, Tuna, and Avocado Bowl is a seafood meal I can get behind.
You might be thinking, packaged tuna? come on Sarah. Well, here’s the deal. I’m a little picky about that too. I actually really love the tuna in EVOO, extra virgin olive oil. It’s a little more expensive, but since I don’t eat it all the time, it’s worth it. I also think it gives the tuna a better flavor than just the regular stuff.
This is a 30 minute dish and and all in one, so it’s great for a weeknight. Those potatoes take a minute (20 to be exact) to roast, so use that time to cut up some fresh fruit for a side. You’re already in the kitchen, make good use of your time.
I talk a lot about the Mediterranean diet and while this is probably not something you’ll see on a menu in Italy, it checks off all the boxes. It has monounsaturated fat from the olive oil, packed with nutrients from the potatoes, and omega-3 fatty acids and vitamin D from the tuna. It’s really a lot of nutrition packed in one bowl.
If you don’t have Everything Bagel seasoning, you can certainly make your own. I get mine from King Arthur Flour and I sprinkle it on just about everything. If you’ve never had it, it has poppy seeds, sesame seeds, onion flakes, salt, and dried garlic. If you have all of those in your spice cabinet, try mixing up a little of your own.
